Mix Spiced Orange Vinegar into Mascarpone Cheese and Spread over the top of your Carrot Cake

Mince Pies with Spiced Blackberry Mascarpone

 

Slowly beat into a tub of Macarpone Cheese some Spiced Blackberry Vinegar until the taste is to your liking and serve with hot mince pies as a quick dessert

Spiced Orange Hot Pudding Sauce

 

25g / 1oz Butter

25g / 1oz Flour

1 pt Milk

2-3 tblsp Sweet Spiced Orange Vinegar

 

Melt Butter in Pan.

Add flour and cook over low heat stirring for 2 mins- do not allow to brown.

Add the Sweet Spiced Orange Vinegar and mix well.

Gradually add the milk- NOTE when you first start to add the milk it will curdle slightly as it comes into contact with the vinegar, don’t worry this will soon go as more milk is added.

Cook over a medium heat until the mixture starts to thicken, stirring all the time.

Simmer gently for 2-3 mins.

 

Delicious poured over Suet and Steamed Sponge Puddings, goes particularly well with Treacle Pudding and Spotted Dick.

Fruit Salad

 

Fresh Fruit of your Choice

2-3 tblsp Sweet Fruit Vinegar, Lavender, Raspberry, Elderflower, or other flavour of your choice.

 

Prepare Fruit and place in bowl.

Pour over the Vinegar. As the Vinegar is sweet there is not normally any need for extra sugar.

Mix thoroughly and leave to infuse for ½ hr before serving at room temperature. Stir again before serving.

Double Crust Apple Pie

 

Short Crust Pastry

10oz / 275g Flour

5oz / 136g Butter

Pinch of salt

Cold Water to mix

 

Filling

1lb / 450g Apple chopped

2 tblsp Rosemary Vinegar

Sugar to taste

 

I find this a good way to use up the Apples the Children have bruised in their lunch boxes and won’t eat. Cooking Apples will cook down to a pulp, Eating Apples when cooked still have a firmness to them. I like to have a mixture in a pie as it adds to the interest.

 

Method

 

Peel, Core and Chop the Apples and cook with the Vinegar and Sugar. Mix well and put aside.

 

Mix salt if using into the flour and rub butter into flour until it resembles breadcrumbs. Add water to mix into a soft dough.

Divide into two

Roll out one piece and use to line an ovenproof Pie Plate/ dish.

Fill with Apple mixture, wet the edges of the pastry ready for the lid

Roll out the second piece and use to cover the pie. Press the edges together with a fork.

Make a couple of slits in the top to let out the steam and brush the top with beaten egg or milk.

Bake at 200C (400F) for 30 mins or until golden brown.

When you take it out sprinkle the top with Caster Sugar.

 

Serve with Icecream, Single or Double Cream, Custard or Evaporated Milk.
